TODAY, FEBRUARY 26 th is NATIONAL CHILI DAY!


The fourth thursday of February celebrates National Chili Day. Chili was originally known as Chili Con Carne. In Spanish, the word chile refers to a “chili pepper”, and carne is Spanish for “meat”. The original recipe consisted of dried beef, suet, dried chili peppers and salt, which were pounded together, formed into bricks and left to dry, which could then be boiled in pots on the trail.
Chili con carne dates back to 1893 when it was introduced at the Columbian Expo in Chicago. The San Antonio Chili Stand helped people taste and appreciate chili. San Antonio was a tourist destination and helped Texas-style chili con carne spread throughout the South and West. In 1977, Texas Legislature declared Chili con carne the official dish of the state of Texas.
Before World War II, hundreds of small, family-run “chili joints” could be found throughout Texas and other states, particularly those in which émigré Texans had made new homes. Each establishment usually had a claim to some kind of secret recipe.
The question of whether beans "belong" in chili has been a matter of contention among chili cooks for a long time. While it is generally accepted that the earliest chilis did not include beans, proponents of their inclusion contend that chili with beans has a long enough history so as to not be considered "inauthentic." The Chili Appreciation Society International specified in 1999 that, among other things, cooks are forbidden to include beans in the preparation of chili for official competition—nor are they allowed to marinate any meats.I prefer my chili with black beans which have been rinsed.
Today is a good day for a savory bowl of Chili. Add 1 teaspoon of ground cinnamon to your recipe for additional flavor, it' so good! Turkey meat is a wonderful alternative to beef.

WARM FUZZIES WHEN YOU SEE DILLIE THE DEER!


My son sent me this video about a deer who was born blind on a farm in Ohio. Her mother rejected her and the family adopted her as a family pet.
The narrative by Dillie's mom is thoughtful and inspirational.
Dillie's mom has written a book about her life and there is a live web cam which one can watch Dillie in her own bedroom.
Being a fellow rescuer of animals, I am thankful to Dillie's family for giving her a 2nd chance and reaching far beyond to help educate and assistant other people in need.

FEBRUARY 10 IS NATIONAL CREAM CHEESE BROWNIE DAY!


On February 10th we celebrate National Cream Cheese Brownie Day. It is a day for all to celebrate one of America’s favorite bar cookie, the brownie, with cream cheese swirled into the top of it or within it. Chocolate and cream cheese, what a fabulous combination! Something sweet and something savory. Yum!
History of Cream Cheese Brownie Day
Brownies date back to the 1800’s, with the first specific reference to them appearing in the Boston Cooking School Cook Book in 1906. It was only a matter of time before something as delicious as a cream cheese brownie scored its own day of celebration and something as universally loved as that chocolaty-cheese combo.
There are hundreds of cream cheese brownie recipes. But here's a super easy one:
CREAM CHEESE BROWNIE RECIPE
Brownie
1 (20 ounce) package fudge brownie mix (13x9 size)
1/4 cup water (or what mix calls for)
1/3 cup oil (or what your mix calls for)
2 eggs (or what your mix calls for)
Topping
1 (8 ounce) package cream cheese
1/3 cup sugar
1 egg
1/2 teaspoon vanilla
INSTRUCTIONS
Preheat oven to 350 F degrees.
Prepare the brownie mix according to package directions (water, oil, eggs).
Pour into a greased 13x9-inch baking pan.
Beat cream cheese with electric mixer on medium speed until smooth.
Add sugar and mix. Add vanilla and egg; mix until well-blended.
Place cheese mixture in dolups over the whole pan, leaving some brownie showing in between.
Cut or swirl through batter several times with a knife or fork for a marbled effect. It can be tricky to get a good marble effect so be careful not to over work it.
Bake for 35 to 40 minutes. Cool; cut into squares.
Sprinkle with mini chocolate chips.
