CHEF CHRIS COSENTINO, PAM DEVENDORF & CORNISH GAME HENS IN CHICAGO!


Chef Chris Cosentino is the executive chef at Incanto, an Italian restaurant located in San Francisco featuring meats of all ages, types and sizes. I first noticed Chris when he competed on Chefs vs City with Aaron Sanchez, newbies to Food Network. Chris and Aaron where team mates competing against another team of Chef's. They would have to find clues in a designated city, eating challenging foods or conducting challenging experiments, on the way to the final destination, where a team would be declared a winner.

Chef Chris's cooking demonstration was a Cornish Game Hen Fra Diavolo with Fennel Citrus Salad, a little heat and a little sweet.
I started cooking cornish game hens last year. Costco carries them in the frozen food aisle. They are the size of a softball and cost between $4 - $5. They are similar to chicken but, a little "sweeter".
During the demo, Duff Goldman of Charm City Cakes was signing boxes of cake mixes at the International Home & Housewares Show, Chicago, Il. The grilling of these hens enticed Duff over for some tasty samplings.
After Chef Chris concluded his demo, he was autographing his cookbook: Beginnings: My Way to Start a Meal and along with copies of Chris' Wolverine comic book which sold out in 4 days. But, Chris kept a few copies around for us ;).
